Sancerre, Upper Loire, Loire, FranceNew to us this sauvignon comes off 27 year old vineyard that is mostly clay and limestone. The fruit is picked on ripeness rather than acidity but the result is still very fresh and mineral-like. The wine is stainless steel fermented and then left on its lees for three or four months. Look for a floral citrus flavour profile with more mineral.
