All winemaking is traditional and terroir based using time-honoured fermentation techniques with the native yeasts, and long aging in large neutral barrels. Despite all that his wines are super clean and fresh. This soft-ish Dolcetto, just under 14 per cent alcohol, will charm you with its nose of almonds and anise and flavours of black cherries and blueberries with an undercurrent of savoury wild fennel.
