True they remain sweet but the volume and weight has given this wine extra punch. The blend is a 70/25/5 mix of corvina Veronese/rondinella/sangiovese all with a portion of ripasso. Some 70% of the grapes are vinified immediately while the remaining 30% are left to dry until the end of December when they are vinified and re-fermented with the wine from the fresh grapes.
