After a brief period in stainless steel, the wine goes to bottle. High altitude/cool climate fruit sourcing conspires to produce a wine that is not only complex but also one that will age. Intense bright apple and lime rind, oyster liqueur notes dominate the nose and palate with flecks of orange and passion fruit; all with tight firm acidity. You can enjoy it now with a variety of foods but it will live for decades.
