Mitolo Jester Cabernet Sauvignon 2006

McLaren Vale, South Australia, AustraliaSome two per cent of the Jester cab is made with dried grapes al la Amarone manner. The technique is used to fill out the mid-palate, perhaps much the same way the shiraz does in the cab shiraz blend. Jester is aged in old French oak for about nine months. The nose is mix of smoky mulberry fruit notes bits of spice and resin or tar. The mid-palate is all cassis with some acidity poking through and lifted fruit and roasted coffee in the finish.
