Valle de Casablanca, Region de Aconcagua, ChileWild Ferment is hand-picked, whole-cluster pressed and fermented wild in stainless steel tanks. The nose is a mix of minerals lees and butter. The entry is soft and round with more buttery lemon fruits and bits of pear and honey. Long and warm, it finishes with a touch of butterscotch. Oddly New Wave (wild ferment, lees, cool-climate) and a touch old fashioned at once.
