Castaño (Experiencia 40 Dias) 2004
Yecla, Valencia and Murcia, SpainRich, smooth, slightly tannic, nice balance with big black licorice, black cherry, mineral, chocolate flavours. Tannins on the finish a bit rustic but good for agingl. Nice fruit intensity. Winemaker Notes: Castaño has been experimenting on the vinification side with extended maceration times and are excited about using the results in future blends of medium to high end wines. All three samples sporting different maceration times (40, 60 or 100 days) were fermented at 25-26º C. There were careful pump-overs, frequently at the beginning, and less frequent after the third / fourth week.
