Castaño (Experiencia 100 Dias) 2004
Yecla, Valencia and Murcia, SpainBig peppery, licorice, black cherry, gamey, meaty nose with a bit of barnyard. Fat, rich, round and supple with ripe black cherry, chocolate, mineral, licorice, christmas pudding flavours. Certainly the most intense and fullest if a bit warm. Winemaker Notes: Castaño has been experimenting on the vinification side with extended maceration times and are excited about using the results in future blends of medium to high end wines. All three samples sporting different maceration times (40, 60 or 100 days) were fermented at 25-26º C. There were careful pump-overs, frequently at the beginning, and less frequent after the third / fourth week.
