Dyer Cabernet Sauvignon 2000

Diamond Mountain, Napa Valley, California, United StatesThe release of the 2000 Dyer Vineyard cab by Dyer Straits Wine Company (owned by Bill and Dawnine Dyer) is the fifth vintage from the Napa Valley winemaking duo that are responsible for myriad wines under the Domaine Chandon label (Dawnine), Miramar Torres, Burrowing Owl, Frog's Leap and before all that Sterling Vineyards (Bill). As in previous vintages, the 2000 is co-fermented with all four varieties rather than blending them later. The blend is 78% cabernet sauvignon, 12% cabernet franc, and 5% each merlot and petit verdot. Only seven barrels were produced, yielding 175 cases. The wine opens with a peppery, spicy, licorice root and blackberry fruit nose mixed with cinnamon and saddle leather notes. Rich, round, intense and dry it has big mountain blackberry, peppery, spicy, licorice, black olive flavours with a cardamom, vanilla, chocolate finish.
