Limestone Coast, South Australia, AustraliaThe fruit for the regular shiraz is sourced from premium vineyards within the Limestone Coast region the majority of which comes out of Coonawarra, Padthaway and Wrattonbully. The juice is fermented in small, four-tonne open fermenters and 35-tonne roto-fermenters. The individual parcels are pressed off the skins and finish fermentation in barrel. Maturation for up to 20 months was in a combination of new and seasoned French and American oak barrels. Look for an open black pepper, blueberry jam, licorice and roasted pepper nose. It is super smooth in the mouth with floral, blueberry, white pepper, leather and licorice tea flavours.
