Tuscany, ItalyVin Santo is not everybody's cup of tea although I must admit it always tastes better in the hills of Tuscany than the restaurants of Vancouver. Frescobaldi's is made with chardonnay, pinot blanc and pinot gris, left on the vine late in the year before they are picked, and air dried until the shrivelled grapes are tiny packets of sugar. Fermentation and extended barrel ageing can give it an oxidized, nutty aroma that contrasts with the sweetness in the wine. May noted "almond and Macadamia nut aromas and "a similar nutty flavour in the finish.
