U Mes U Cygnus Deneb Cava Brut Nature NV

Catalunya (Catalonia Cataluña), SpainThis organic cava is entirely Xarel-lo from a single vineyard, went through full MLF, and was produced without the addition of sulfites. Cygnus is the swan constellation, and Deneb is the brightest star within. This bottle was disgorged January 2023, from the base year 2019. Crisp yellow apple, white grapefruit is scented with pear blossom and subtle quince, all strung taut and nervy along a crushed stone base.
