Bairrada, Northern Portugal, PortugalThis traditional method rosé blends 40% baga, 30% pinot noir, and 30% touriga nacional from Bairrada's limestone soils. After ferment in stainless, this moved to bottle for 2nd ferment and nine months sur lattes. It was disgorged in November 2021. Pale peach in hue, this has subtle bubbles carrying rainier cherry and delicate strawberry, with a lightly toasty backdrop and a mainly dry palate.
