The fruit comes off San Luigi Vineyard, which sits at 400m elevation, and is fermented with wild yeasts before aging in a combination of stainless steel, cement, and wood. It shows beautifully delineated sappy dark cherries and wild strawberries, intertwined with fresh roses, lavender, and sweet spices. Juicy and well-structured, with a lovely purity, this will be at its best served with a light chill at the dinner table.
