St David's Bench, Niagara Peninsula, Ontario, CanadaTherianthropy is the mythical process of shapeshifting, which is another way to view turning nature into wine. This small collaborative project launched in late 2019. This pinot comes from tavistock red phase, toledo loamy phase soils, uncommon in the region. After a cultured native ferment over 3 weeks with 50% whole cluster, this rested in concrete eggs for 7 months without disturbance. It was bottled unfined and unfiltered. Perfumed raspberry, cherry, and tart rhubarb fill the frame of this slight pinot, with bright acidity, and soft, fine tannins through the gently spiced finish.
