Oliver, Okanagan Valley, British Columbia, CanadaIn year seven, Pink Bub is an old vine pinot blanc that’s whole cluster pressed, fermented, and aged in concrete tanks. The secondary fermentation takes place in horizontal Charmat tanks with daily lees stirring for three months, adding density and palate weight to a fresh, creamy, sparkling wine. The colour results from a drop of still red wine in the final blend. Look for tart raspberry, tangy lemon, and fresh red apple with a hint of tangerine in the smooth finish.
