Okanagan Valley, British Columbia, CanadaHaywire has always been about the less is more philosophy, trading oak and fat fruit for concrete and delicate, refined, cool climate characters. Perfectly ripe, the creamy textures draw you into this wine that opens with leesy, nutty, lemon notes that fade into a grassy, oatmeal, citrus/saline finish. There is much to consider here; it will only intensify in bottle over the next three to five years. A chardonnay to contemplate and pair with a favourite halibut dish or, more simply, freshly cracked oysters.
