Vouvray, Touraine, Loire, FranceFrançois, a former child psychologist, took over the Vallée de Cousse, Vouvray estate from his father in 1987, and is now joined by his son, Julien. The vineyards are dedicated to organic viticulture and minimal intervention vinification. These vines are rooted in clay over limestone, and were native fermented over 3 months, stopped with a chill, and transferred to old barrels to age 5 months on lees. Though certainly sec (dry), this has a bump of 8 g/L RS ably balanced out by the racy citrus acidity, streaming along candied tangerine peel, Asian pear, white tea, salted marcona almonds across a base of crushed stones, trailing off into a lengthy salinity.
