Vouvray, Touraine, Loire, FranceFrançois, a former child psychologist, took over the Vallée de Cousse, Vouvray estate from his father in 1987, and is now joined by his son, Julien. The 37 acres of vineyards are dedicated to organic viticulture and minimal intervention vinification. From flinty clay over limestone bedrock, this was native fermented. Crushed stones, quince skin quiver along a medium palate, taut with a pithy framework, and lingering with ample salinity.
