Champagne Henriot Blanc de Blancs NV
Champagne, FranceHenriot's vineyards have been around since the 1700s, but they didn't begin producing sparkling wine until 1808, when Apolline Henriot began to make wine from her family's lands. 2/3 of this BdB comes from 1er and GC fruit, and employs 30-50% reserve wines, including partial perpetual. It spent 4 years on lees, and was dosed with 7 g/L. Abundant buttered popcorn and toasted brioche lead, wrapping around an expansive core of apple and lemon, finishing with a chewy, chalky wake. For all its doughy toastiness, this is pristine.
