Champagne, FranceHenriot's vineyards have been around since the 1700s, but they didn't begin producing sparkling wine until 1808, when Apolline Henriot began to make wine from her family's lands. 2/3 of this BdB comes from 1er and GC fruit, and employs 30-50% reserve wines, including partial perpetual. It spent 4 years on lees, and was dosed with 7 g/L. Abundant buttered popcorn and toasted brioche lead, wrapping around an expansive core of apple and lemon, finishing with a chewy, chalky wake. For all its doughy toastiness, this is pristine. Ideally situated for richer risotto and/or crab / lobster / scallop dishes.Tasted: 28 November 2022Tasted by: Treve RingPrices:
