Yalumba Cabernet Sauvignon/Shiraz The Signature Nick Waterman 2018

Barossa Valley, South Australia, AustraliaIn 2018 The Signature is a 54/46 cabernet sauvignon/shiraz blend of all Barossa fruit. Of note are the shiraz blocks that date back to 1945. It all fermented and aged for 21 months in 33 percent new French barriques, American and Hungarian hogsheads, with the balance in older French, Hungarian, and American barriques and hogsheads. It opened with intense black and blue fruit mixed with mint and cedar, and some meaty notes from the shiraz, alongside black plums and licorice. It is as elegant as it gets for Barossa, but there are tannins to shed, so a decade of bottle age or more is recommended, especially given the track record of this label, made only in the finest vintages. Each vintage of The Signature is named in honour of an individual who has contributed significantly to Yalumba's culture and traditions, and in 2018 the award goes to Nick Waterman.Tasted: 14 October 2022Tasted by: Anthony GismondiPrices:
