Vittoria, Sicily, ItalyFrom one of the world's leading natural winemakers and advocates, Arianna Occhipinti transmits terroir from south western Sicily's limestone-laced via her organic, non-interventionist wines. This special nero d'avola passito was destemmed and had 2 weeks of drying time on racks prior to a native ferment with 30 days maceration on skins. It then aged 16 months in 750L barrels before heading to bottle unfined and unfiltered, where it remained for at least 6 months prior to release. Layers of ripe cassis, ribena jam, red liquorice, golden raisins, dried paper and old leather work across a hazy, textural, sweet palate, studded with cracked cloves, wild mint, and flake salts.
