Bairrada, Northern Portugal, PortugalThese biodynamic Bical grapes come from the chalky clays of Óis do Bairro vineyard, and 40 year old vines. It was whole bunch, native ferment into 500-600L pipas, where it remains on lees, without bâtonnage, for 8 months. Pouring a deeper lemon hue, this streams wild herbs, lemon verbena, white blossoms, lemongrass, green apple along a taut, saline palate, laced with lemon pith and peel.
