Domaine Respelido Tavel Rosé 2021

Tavel, Southern Rhone, Rhone Valley, FranceThe cooperative cellar of the winegrowers of Castelas, created in 1952, works with wines of the Côtes du Rhône, Côtes du Rhône Villages Signargues, IGP du Gard, and AOP Tavel, the latter of which is the origin of Respelido. The wine comes from an ancient Tavel property bought by one of the family founders of Les Vignerons du Castelas in early 2000. It was wholly replanted in 2015. Respelido gets 18 hours of skin contact before it's fermented in stainless steel resulting in a much darker coral colour than its Provençal cousins. It's a 90/10 blend of grenache/syrah that opens with cherry, mandarin, and red currant. It is fresh and well balanced, and comes with a structure not generally associated with modern rosés. You can comfortably bring this wine to the dinner table and pair it with mussels, chicken, salmon, or roasted vegetables.Tasted: 11 August 2022Tasted by: Anthony GismondiPrices:
