If successful, OCP can convert 3000 cases of sparkling, reducing the weight of glass by 36,000 pounds. This blush-hued charmat is entirely pinot blanc, from a 40+ year old Okanagan Falls vineyard, fermented native in concrete before heading to the pressurized tanks for 90 days (XC). Pouring a peach-blush hue, this is brisk and dry-ish, with ripe pink grapefruit, pear skin, apricot skin on a riffing palate.
