Bairrada, Northern Portugal, PortugalThis old vine baga comes off various vineyards currently under conversion to organics / biodynamics. Grapes were destemmed, and native fermented in open oak lagares with some extraction (pigeage) and little maceration on the skins. The wine is aged in 500 – 600L used pipas and tonel for 9 months. Stony plum, thorny blackberry wild blueberry is gripped with ample fine gritty / grippy tannins, and lit with buzzy limestone acidity through the bitter cassis finish.
