Niagara Peninsula, Ontario, CanadaOn Seven did not release a red Pinot Noir from the 2021 vintage, directing the fruit instead to this new rosé. From organic Dijon clone 115, planted in 2017 on calcareous clays, this was whole cluster pressed and native fermented in neutral French barrels for 8 months. Pouring a pale hue, this sleek rosé carries wild strawberry, wild raspberry, cherry blossom along the medium palate, with a fine dusting of spices and bright mandarin pith seasoning.
