Tantalus Blanc de Blancs 2019
Okanagan Valley, British Columbia, CanadaThis pristine and racy blanc de blancs comes off one block of chardonnay, and was fermented in older puncheons and barrique, remaining there on lees until the following May when it headed to bottle for 2nd ferment. It remained en triage for 22 months, and was disgorged in March 2022 with 4 g/L dosage of 2019 Chardonnay. Green apple crisp, with echoes of lemon peel, anise, verbena, and broken stones that linger through a well-placed herbal lees bed and along the saline finish.
