Mâcon-Villages, Mâconnais, Burgundy, FranceCreated by Claude Seigneuret in 1926, the Domaine de la Sarazinière estate name stems from the small lieu-dit surrounding the original family home in the village of Bussières. Today it is run by a father-son team of Phillippe and Guillaume Trebignaud, with organic/biodynamic farming and low intervention winemaking. Le Pavillon is centred on Bussières' calcareous clays, is native fermented and aged in stainless for 12 months before bottling unfined with minimal addition of sulphur. Expansive in that distinctive Mâcon way, this medium-bodied white is lined with green apple and delicate cream, tightened with tangerine pith, and scented with apple blossom.
