They were then blended. Apricot, lime pith, white peach and lemon sherbet rule the tight, compact palate, finishing briefly with a citric tablet note on an off-dry finish. That's exactly what Chronos, a relatively new brand from Time Family of Wines, did. This is light and approachable, showing lime blossom and candied green apple. It finishes just off-dry thanks to a bump of residual sugar (7 g/L), while still being crisp and refreshing. It was fermented in two separate tanks, one dry, one with some residual sugar left, at different temperatures, and with different yeast strains to add extra complexity and balance. The nose is Alsace floral with white flowers and honeycrisp apple. The attack is medium dry with lime and mineral earthy notes.
