Stag's Hollow Cachet 05 Limited Edition 2018
Okanagan Valley, British Columbia, CanadaThe attack is full on with smoked meat, toast, and strong savoury notes of mostly black fruits but with a touch of red fruit acidity underneath. The finish is similar, with more sagebrush and desert scrub notes woven into soft tannins. Cachet wines are not produced every year. Amalia Vineyard in Osoyoos is the source for Cachet No. 5, which leads with syrah and merlot and lesser amounts of cabernet franc and cabernet sauvignon from the same block. Post ferment, it is aged in a mix of one 500L French oak puncheon (Syrah) and two French oak barriques (Merlot field blend) for 18 months.
