Penfolds Cabernet Shiraz Bin 389 2019

South Australia, Australia‘Baby Grange’ is used as a moniker for Bin 389 primarily because components of the wine are matured in the same barrels that held the previous vintage of Grange, i.e. one-year-old American oak. Wood aside, 389 has always been crafted as red wine with the structure you expect from a cabernet but the richness you find in a great bottle of shiraz. In 2019 the mix is 53/47 cabernet sauvignon/shiraz. It is a multi-regional blend involving Padthaway, McLaren Vale, Coonawarra, Wrattonbully, and Barossa Valley. This spends a year in oak (25 percent new). The winemaking team talks about black forest cake as a marker for this red, so if it didn’t have your interest before, it may now. Coffee, cola, chocolate, and spice penetrate the wine through the finish. It’s the textures that attract, so lush and smooth but all balanced by the appropriate acidity that keeps it fresh and humming along the palate.
