Muscadet, Pays Nantais, Loire, FranceDomaine de l'Ecu has been farming its 27 hectares without chemicals since 1972, and has been biodynamically certified since 1988. The Domain was groundbreaking in its isolation of wines by soil type (Gneiss, Orthogneiss, and Granite), showing how the profound differences in terroir affect melon de bourgogne. They also own more than 30 amphorae, ranging from 150, 300, to 450 liters. Granite is from vines 45 to 55 years old, native fermented in underground cement where it remains for a few months on lees. This is pure rock juice, slender along the palate, carrying melon, lemon blossom, green apple, wet stone, and a briny marine salinity through the lingering finish.
