Domaine Chevalier Bourgogne Aligoté 2018

Burgundy, FranceDomaine Chevalier originated in 1850 when it was created by Emile Dubois. From 30 year old vines in the village of Ladoix Serrigny, on the Côte de Beaune, this Aligoté was fermented and aged in stainless over 11 months, and lightly fined and filtered before bottling. The 2018 is showing some age, with aligoté gaining a honeyed edge to the stone, pear, subtle quince and a slick of brown butter on the lightly waxy palate, finishing with a lemon pith flicker.
