Niagara Peninsula, Ontario, CanadaThis deeply crimson hued rosé is a blend of 66% Pinot Noir, with Gamay, Merlot and Lemberger from various vineyards across the Niagara Peninsula. All were direct press, with various time on skins (2, 4, 6 days) each in their own concrete tank for native ferment. After 7 months there on lees, sans bâtonnage, the wines were blended and aged for 2 more months in stainless, prior to bottling without fining or filtration. Silky and sultry on the dry palate, with a melange of cherry, cranberry, red currant jam on a glycerol-bedded, medium bodied palate. Rock salts are studded throughout, finishing with a saline wash. The expanse on the slight 13% palate gives this opportunity to stand up to some bigger dishes, like miso marinated grilled tofu or chicken.Tasted: 25 July 2021Tasted by: Treve RingPrices:
