Sicily, ItalyAraldica is a third generation, family operated co-operative based in Piedmont, though they also work on projects outside of their home region, like this catarratto, from Sicily. The grapes are organically grown in chalky soils at 500 metres, near the town of Calatafimi. It was fermented and aged in stainless to preserve the fruit. On the palate, look for exotic fruit, green melon, Asian pear, with a fennel undercurrent before a crisp, if short, dry finish. Steamed clams or mussels would be a good match, as would a buttery piece of halibut.
