Okanagan Valley, British Columbia, Canada2016 The One is an all Okanagan Falls bubble. It comes off the 34-acre Noble Ridge Vineyard, and is a blend of 61% chardonnay (clone 76 and 95), and 31% pinot noir (clone 115 and 777). The fruit is gently whole cluster pressed and aged en tirage for an impressive 42 months. The extra added time is noticeable with creamy brioche setting up the base before a salty, citrus, green apple, stony profile kicks in. The mousse is medium and persistent.
