Montalcino, Siena, Tuscany, ItalyIn the highly regarded 2016 vintage, the fruit was cold-soaked for colour and aromatics before a two week natural fermentation in concrete. It is aged about 30 months in 10-15hl barrels from Garbellotto, specially selected for Suolo. From there, it spends ten months in a bottle. The nose is extremely complex and broad. Look for savoury, raspberries and red cherry flecked with orange peel, thyme, and balsamic. Dense and structured, the tannins are supple and well integrated into a stylish, silky finish. Suolo is the oldest and highest sangiovese vineyard in the group at almost 60 years, and it is situated 280 to 310 meters above sea level over heavy limestone-rich soil. The vines are the oldest as well, at 65+ years.
