Tasmania, South Australia, AustraliaDr. Edge is the personal wine project of Peter Dredge, the head winemaker of Meadowbank. This is a blend of several vineyards across Tasmania, blending East Coast, Tamar Valley, and Pipers Brook fruit. The 2019 saw a slight shift with more Northern Tasmanian fruit due to the bushfire affect in the South. After a native ferment and two weeks on skins, this was pressed to oak casks where it remained for 9 months before heading to bottle without fining. Pouring a pale crimson hue, this lighter, ethereal red opens with ample fragrant perfumed raspberries and cherries, dusted with pink peppercorns and riding a bed of finely crushed rock. There's a slight green sapidity woven throughout the length of this slender wine, one easily lofted with acidity, framed with fine, spiderweb tannins, and finishing with a hint of mineral salts.
