Niagara Peninsula, Ontario, CanadaThis Traditional Method Sparkling wine is made from a base of 25% Quarry Road Chardonnay, 31% Laundry Vineyard Pinot Noir, and 44% Hillside Vineyard Pinot Gris, sustainably farmed, and with 12 months on lees prior to a disgorgement with 11 g/L RS. Red apple, white peach, pineapple rind, musk melon rule the forward, juicy palate, lassoed with shearing acidity to a snappy lime sherbet finish.
