Beamsville Bench, Niagara Peninsula, Ontario, CanadaFrom their Beamsville Bench estate Cave Spring Vineyard, and its limestone soils, this is an old-vine parcel selected for a vintage dated fizz, with more than 5 years on lees prior to disgorging. The time on lees is evident, with a salted, savoury biscuit supporting tight lemon, green apple, meringue on a slender, structural palate, with riveting limestone acidity to liven. The finish lingers is a hum of lemon pith and shimmer of stones.
