Domaine Des Champs Fleuris Les Rotissants Saumur Blanc 2017

Saumur, Loire, FranceFrom Saumur's Turquant and Montsoreau, and clay-limestone hillsides, these chenin vines average 30 years and stretch up to 70 years in age. Whole cluster, including some botrytized grapes, and fermented in barrel where it remained for one year with regular battonage (1/3 new wood). This is a rich and full white, amped triply via ferment and time in wood, battonage, and the aforementioned botyrtized grapes adding luring and heady layers of honeysuckle and dried apricot. That's joined by acacia blossoms, hawthorne, full cream, ripe pear, and rafts of spicing flooding the voluptuous palate. Fortunately, all of this is easily lifted by chenin's inherent acidity, and the region's limestone studded soils, making this 14.5 degree wine feel effortless on the palate and lengthy finish.
