Bairrada, Northern Portugal, PortugalThis traditional method fizz comes from Bairrada's limestone-laced soils, and is entirely baga, a key local grape. You can easily feel the limestone buzz underneath a peculiar mix of rosemary, wild mint, yellow plum, and broken stones, with a slight kiss of wild flowers on the chalky finish.
