Côtes du Roussillon Villages, Roussillon, Sud de France, FranceThe Lapidem Rouge cépage is syrah, grenache, and carignan set on gneiss, schistous, and limestone soils. The destemmed, uncrushed grapes go through an extended four-week maceration before ageing in concrete tanks. The colour is opaque, the nose is a wild mix of garrigue and black raspberries that spill onto the palate, along with stony, savoury liquorice, and meaty, curry flavours. You can drink this now or wait a decade. Grilled lamb chops would be an excellent match.
