Penedès, Catalunya (Catalonia Cataluña), SpainSummer cherries, salted nuts, apple brioche, rhubarb, light toast and a whiff of smoke fill this bright pink fizz from one of Penedès' leading biodynamic families, Parés Balta. This traditional method Cava blends garnatxa, parellada, and macabeo, and rests 18 months on the lees prior to release, with zero dosage. The riveting, joyous cran-tinged acidity works well with the slightly plump, red-fruited palate, finishing with a lingering deep berry essence and spice.
