Township 7 Seven Stars Polaris 2016
Oliver, Okanagan Valley, British Columbia, CanadaWinemaker Mary McDermott is bringing back the Township 7 bubble program with the release of three traditional méthode labels: Polaris, Equinox and Eclipse. McDermott has made a bunch of fizz at Trius Winery in Ontario, so I am expecting good things. Polaris is the brightest star in the Ursa Minor constellation and is the centre of the new releases. It’s a blanc de blanc, made from chardonnay grown at one site in Oliver, along with the estate vineyard in Naramata. It has spent a reasonable 18 months en tirage to add some texture and mouthfeel. The attack has a ripe apple demeanour, and the entry is soft and round with creamy baked apple, flecked with sweet lime and peach.
