Pouilly-Fume, Upper Loire, Loire, FranceTheir flagship wine blends various blocks of sauvignon blanc to provide a snapshot of their Fumé Blanc site. After pressing, this spent a few months on lees until the following January when it was fined and then bottled in the spring. Tight, green and citrus, with hedge, grapefruit, and white flowers, this is a lean and streamline glimpse of savvy, seasoned with a savoury smoked stone, characteristic of Fumé. Austere, including direct pressing and maturing on its fine lees.
