Freixenet Cordon Negro Gran Selección Cava Brut NV

Penedès, Catalunya (Catalonia Cataluña), SpainFreixenet's Cordon Negro is a classic for a reason. It's a fairly priced traditional method sparkling wine that captures the essence of Cava. There’s subtle toasty autolytic character from a short time on lees and a savouriness that I generally associate with Penedès' indigenous varieties. Underneath is green apple and lemon, but it's safe to say this is not an overly fruity wine. Medium-bodied, there’s surprising precision to the palate with a fine mousse leading to a dryish finish at 10 g/L residual sugar.
